Sunshine Smoothie

Every Tuesday, Project Healthy Ever After  hosts a smoothie party and invites people to share their favorite blended combinations.  Today, I used one of my kids’ favorite smoothies, a Mango-Peach Smoothie, and added a bit of pureed watermelon to the top, just for fun.

The colors were beautiful and reminded us all of a sunny day–on what happens to be a rather stormy day here!

Linda from Project Healthy Ever After started her Facebook page and blog after, in her words, “being sick and tired of being sick and tired.”  She has since made permanent lifestyle changes and is sharing them in a fun and delicious way.  If you have a moment, click on the above links to visit Linda and see her smoothies and other wholesome and satisfying recipes.

Sunshine Smoothie
On occasion, I add 1/2 teaspoon or so of grated ginger to the mango-peach mixture. After I made this with the watermelon for the first time, I was thinking it would be fun to freeze the fruit and make an orange layer, then a red layer!
Ingredients
  • 1 peach, sliced or about 1 cup frozen slices
  • 1 mango, peeled and diced or 1 heaping cup frozen chunks
  • 1/2 cup Chobani 2% plain yogurt (could substitute vanilla, honey, peach, or mango)
  • 1/2 cup orange juice
  • dash or two of cinnamon
  • 1 tablespoon honey (see note)
  • 2 cups fresh watermelon, seeded and chopped
Instructions
  1. Place all ingredients except the watermelon in a blender. Cover and puree until smooth. Add a little extra orange juice if you prefer a thinner smoothie.
  2. Pour into two glasses.
  3. Add watermelon to the blender and puree. Pour over the mango-peach mixture in each glass and enjoy!
Notes
  • I find when I use frozen fruit, it is not quite as sweet as fresh. Depending on what you are using and how sweet you like your smoothie, you may add the honey to suit your taste.
  • If using frozen peaches and frozen mango, you may need to add a bit more juice.

oh MY! I happen to have everything to make this on hand except the watermelon. I think I will make it for my morning smoothie, and add my usual spinach, or leave the spinach out. YUM!

Given the natural sweetness of this smoothie and being a diabetic I found it necessary to alter the honey just a bit and used algave – tasted great however needs more altering to keep blood levels in line….thanks for posting this.

We love this smoothie and I really think the magic ingredient is a nice, sweet mango. It adds great thickness and flavor. I hope you enjoy!!
