Apricot Peach Yogurt Smoothie

Christian and I had a date with Grace, my 2-year-old niece, to make homemade play dough (see the blue fingernails in the photo below) and after lots of rolling, cutting, pressing, and being silly, they were hungry!  I had promised Christian an apricot peach smoothie the day before, and we never got around to it.  So, while they were cleaning up, I reached for the blender.

The following recipe is a great framework for almost any flavor smoothie you can imagine. In lieu of the peaches and apricots, you could use all berries.  Pineapple or white grape juice could be used in place of the orange juice; coconut milk is tasty, too.  (When using orange juice, freshly squeezed is delicious.)  If you have plain or a flavored yogurt on hand, go ahead and use that.  Depending on what exactly you throw into the blender, you may simply want to taste for sweetness at the end, adding a bit of honey or other sweetener, if desired.

As you can see by the photos, their heads were down and they slurped away.  They were happy there was a little left in the blender for a small refill.  Grace’s only request:  may she have a blue straw the next time!

Apricot Peach Yogurt Smoothie
For extra fruity flavor and a hint of pink, we like this smoothie with a small handful of fresh or frozen strawberries blended in. When apricots and peaches are not in season, feel free to use all frozen peaches or a mixture of peaches and mango.
Ingredients
  • 1 1/2 cups mixture of chopped apricots and peeled peaches, pits removed (see notes)
  • 1 frozen banana
  • 1/2 cup vanilla Greek yogurt (I use Chobani)
  • 1/2 cup ice
  • 1/4 cup freshly squeezed orange juice
  • 2 teaspoons honey (or sweetener of choice, to taste)
  • 4-6 fresh or frozen strawberries, optional
Instructions
  1. Place all ingredients in the blender and blend until completely smooth, scraping down the sides of the blender if needed.
  2. Check for sweetness and pour into two medium or one large glass.
Notes
  • May use fresh or frozen fruit. (I used 4 small apricots and 1 large peach for this batch, all fresh.) The smoothie will be thicker if frozen fruit is used but likely a bit sweeter if fresh, seasonal fruit is used. Feel free to adjust honey or sweetener of choice to taste. If added thickness is desired when using fresh, unfrozen peaches and apricots, you may add more ice or another frozen banana.

    Great recipe! My boys loved this and have asked for it everyday! I used plain Greek yogurt from a local creamery, store bought yogurt doesn’t hold a candle to it!

    I used frozen peaches from my parents tree, apricots and a few strawberries. I was out of frozen bananas. I even used some kale I had n the freezer!

    Great recipe as usual!

      You can definitely substitute the yogurt for whichever flavor you have on hand. If you omit the fruit entirely, it will be different because even the fruit yogurt won’t have the same amount of fruit as this recipe. But the great thing about smoothies is that you can truly add what you like or have on hand and they usually turn out well. Frozen fruit is great to have on hand, and you can always add more peaches than apricot or even use mango when apricots aren’t in season.
