Mom’s Tiny Cheesecakes
This easy cheesecake recipe comes in individual servings, so no messy slicing!

Ingredients
2 8-
ounce
packages of cream cheese
¾
cup
(105g) sugar
2
eggs
1
tablespoon
lemon juice
1
teaspoon
vanilla
1
can pie filling?
18-25
vanilla wafers?
Instructions
Preheat the oven to 375 ℉ and line muffin tin with individual muffin liners. We like the mini muffin tins, but a larger size is fine as well.
Mix the first five ingredients in a medium sized bowl
Place one vanilla wafer at the bottom of each muffin cup
Spoon cheese mixture on top, dividing equally between cups
Bake 15-20 minutes
Allow to cool completely
Top with pie filling
