Mix-in options (choose as many as you like): mini chocolate chips, granola, raisins, dried cranberries, shredded coconut, chopped nuts
Instructions
Core the apple, leaving the bottom in tact. (I stick a sharp knife straight down to make a square around the core and then work it out in several pieces. It doesn't have to be pretty, just get all the seeds and eyeball an opening big enough to stuff in about 2 tablespoons of the peanut butter mixture.)
In a small bowl, mix the peanut butter with your preferred stuffing ingredients. Start with about a tablespoon of peanut butter--again, it's fine to eyeball it--and stir in the mix-ins. If the mixture needs a little more binder, add more peanut butter and vice-versa. It's hard to go wrong and you can always heap a little extra on top of the apple or reserve for another apple (or eat it as is!). Stuff the mixture into the hollowed out apple. A butter knife or chopstick may be used to stuff the mixture to the bottom of the whole.
These apples may be prepared several hours in advance and refrigerated until hungry kids return from school. Adults tend to enjoy these, too, but may prefer to have the peanut butter mixture spread over a halved or quartered apple. : )
*This is our favorite, but you may substitute nut butter of choice. You could even try Nutella.
