In a small bowl, mix together water and yeast. Stir to dissolve yeast, then add oil and honey.
In a large bowl, combine flours, flax, salt and pepper. Make a well in the middle of the flour mixture. Pour wet ingredients in and stir to combine. Cover and set in a warm place for one hour.
Spread the dough over the bottom and up the sides of a greased 12-inch cast iron skillet. Top with desired ingredients and bake. For Sausage, Mushroom and Fontina Pizza, I bake at 400 degrees for 20-25 minutes and allow pizza to stand 5-10 minutes before serving.
