Harissa Roasted Green Beans
Yield: 4 servings (easy to make for 1, 2, 3 or more)
A singular condiment adds culinary magic to simply roasted vegetables, in this case, transforming basic green beans into a restaurant-worthy side dish. The best part? The dish takes less than 15 minutes start to finish! 


  • 1 pound fresh green beans
  • 1 tablespoon (14ml) olive oil
  • 1 tablespoon (15g) harissa paste
  • ½ teaspoon kosher salt (a little less if using table salt)



  1. Place a rack in the upper position of the oven and preheat the oven to 425°F. Wash the greens beans, thoroughly dry, and then trim the ends.
  2. In a mixing bowl, combine the olive oil and harissa. Add the green beans and toss to evenly coat. Sprinkle with the salt and toss again.
  3. Transfer the green beans to a large, rimmed baking sheet (no need to grease), and spread them into an even layer. Place on the upper rack of the oven and roast for 10 to 12 minutes, stirring once halfway through, or until the beans are lightly browned and look slightly shriveled. Remove the beans from the oven and enjoy.


I usually serve these green beans as written, although a garnish of 2-3 tablespoons roasted, chopped almonds adds a hint of crunch and complementary flavor if you’d like to tweak.
