Apricot Peach Yogurt Smoothie
For extra fruity flavor and a hint of pink, we like this smoothie with a small handful of fresh or frozen strawberries blended in. When apricots and peaches are not in season, feel free to use all frozen peaches or a mixture of peaches and mango.


Ingredients

  • 1 1/2 cups mixture of chopped apricots and peeled peaches, pits removed (see notes)
  • 1 frozen banana
  • 1/2 cup vanilla Greek yogurt (I use Chobani)
  • 1/2 cup ice
  • 1/4 cup freshly squeezed orange juice
  • 2 teaspoons honey (or sweetener of choice, to taste)
  • 4-6 fresh or frozen strawberries, optional

Instructions

  1. Place all ingredients in the blender and blend until completely smooth, scraping down the sides of the blender if needed.
  2. Check for sweetness and pour into two medium or one large glass.

Notes

  • May use fresh or frozen fruit. (I used 4 small apricots and 1 large peach for this batch, all fresh.) The smoothie will be thicker if frozen fruit is used but likely a bit sweeter if fresh, seasonal fruit is used. Feel free to adjust honey or sweetener of choice to taste. If added thickness is desired when using fresh, unfrozen peaches and apricots, you may add more ice or another frozen banana.
