Baked Tilapia with Black Bean Salsa


  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup corn, frozen and thawed; fresh if available
  • 1 15-ounce can black beans, rinsed and drained
  • 1/4 cup cilantro
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • kosher salt and freshly ground pepper to taste

For the salsa

  1. Mix all ingredients in a large bowl and refrigerate until ready to use. The longer it sits, the more the flavors blend and the tastier it gets! Serve cold or at room temperature.

For the tilapia

  1. Place desired number of fillets on a greased baking sheet with sides. Brush lightly with olive oil and sprinkle with kosher or sea salt and freshly ground pepper. Bake for 10 minutes at 350 degrees or until fish flakes easily and is opaque on the inside when tested with a fork.
