Cilantro Lime Vinaigrette
The stems of cilantro have great flavor, too, so feel free to throw them into the blender along with the leaves.

Yields approximately 1 1/4 cups.


Ingredients

  • 1/3 cup lime juice
  • 1/4 cup honey (see notes)
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon sesame oil (optional, but adds nice flavor)
  • 1 jalapeno pepper, seeded and coarsely chopped (may leave some seeds if you like some heat)
  • 1 clove garlic, minced
  • 3/4 teaspoon minced fresh ginger
  • 1/3 cup packed cilantro leaves
  • 3/4 teaspoon kosher salt, or to taste
  • 1/3 cup olive oil

Steps

  1. Pour the lime juice, honey, balsamic vinegar, and sesame oil into the blender. Add the jalapeƱo pepper, garlic, and ginger and blend until until everything is incorporated.
  2. Add the cilantro and salt. Blend again, scraping down the sides of the blender, as needed.
  3. With the blender on, slowly drizzle the olive oil through the hole in the lid until incorporated into the dressing. Use immediately or pour into a jar and refrigerate until ready to serve.

Notes

  • You may use 3 tablespoons of honey for a tarter dressing–although the dressing with 1/4 cup is not overtly sweet. Also, agave syrup may be used as a substitute for honey, if preferred.
