Cinnamon Oatmeal Raisin Cookies
These cookies smell incredible and are soft, chewy and everything a cookie should be! On occasion, I omit the cinnamon and add chocolate chips or chunks.

Ingredients

plus 6 tablespoons butter, softened

firmly packed brown sugar

granulated sugar

vanilla

all-purpose flour (my gluten-free mix works great)

teaspoon
baking soda
1 1/2
teaspoons
cinnamon
1/2
teaspoon
kosher salt

cups
old-fashioned oats
1
cup
raisins
Instructions
Preheat the oven to 350 degrees F.
In a large bowl, beat the butter and the sugars on medium speed until creamy.
Add the eggs and vanilla, and beat until incorporated.
In a separate bowl, mix the flour, baking soda, cinnamon, and salt. Add to the wet ingredients and beat to combine.
Add the oats and the raisins and thoroughly combine.
Drop by rounded tablespoonfuls onto ungreased cookie sheets. (See notes) Bake 8-10 minutes or until just cooked and lightly golden.
Cool completely and store in an airtight container.
Notes
I often use a large ice cream scoop to make perfectly-shaped, jumbo cookies and bake them just a few minutes longer.
