Mom's Tiny Cheesecakes
Yield: Serves 18-25
This easy cheesecake recipe comes in individual servings, so no messy slicing!


  • 2  8-ounce packages of cream cheese
  • ¾ cup (105g) sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 can pie filling?
  • 18-25 vanilla wafers?


  1. Preheat the oven to 375 ℉ and line muffin tin with individual muffin liners. We like the mini muffin tins, but a larger size is fine as well.
  2. Mix the first five ingredients in a medium sized bowl
  3. Place one vanilla wafer at the bottom of each muffin cup
  4. Spoon cheese mixture on top, dividing equally between cups
  5. Bake 15-20 minutes
  6. Allow to cool completely
  7. Top with pie filling
