- 2 cups pineapple, peeled and diced
- 1 cup red pepper, diced
- 1/4 cup red onion, minced
- 1/4 cup mint, chopped
- 2 tablespoons cilantro, minced
- 1/2 -1 jalapeno pepper, seeds removed and minced
- 2 tablespoons honey
- 1 tablespoon lime juice
- sea or kosher salt and freshly ground pepper to taste (I used a little over 1/4 teaspoon of salt)
