Avocado Turkey Panini

If you don't have a panini press, simply grill as you would your favorite grilled cheese. To mimic the pressed, crusty panini, weight down the sandwiches with a cast iron or other heavy skillet. For another layer of flavor, you could add a thin spread of Dijon mustard or pesto under the cheese.

Yields 2 sandwiches.

Ingredients

  • 4 slices country style or other hearty bread (ciabatta rolls work well, too; see notes)
  • 1/4 pound leftover shredded turkey or chipped deli turkey
  • 1/2 ripe avocado
  • 1 tablespoon mayonnaise
  • 1/8 teaspoon each kosher salt and pepper
  • 1 tablespoon olive oil
  • 4-6 slices Sargento Ultra Thin or regular Provolone cheese (may substitute variety of choice)
  • 1 cup fresh spinach leaves
  • 1 roasted red pepper, sliced into thin strips (may use freshly roasted or marinated from jar)

Instructions

  1. Preheat a panini press. (You may use a skillet or grill pan if you don't have a panini press.)
  2. In a small bowl, mash the avocado, mayonnaise, salt and pepper together until thoroughly mixed.
  3. Brush one side of each piece of bread with olive oil, and place with the olive oil side down.
  4. Top two of the bread slices with three pieces of the thin sliced cheese or two pieces of the regular, breaking as needed to evenly cover the bread.
  5. Place half of the sliced turkey, half of the spinach leaves, and half of the sliced pepper on top of each piece of cheese covered bread.
  6. Spread half of the avocado mixture on the two remaining slices of bread (on the side without the olive oil), and place on top of the turkey covered pieces.
  7. Carefully, place the sandwiches on the panini press, and cook until the bread is golden brown and crisp and the cheese has melted, about 3 to 5 minutes.
  8. Cut in half and enjoy warm.

Notes

  • The last time I made these, I used a rosemary peasant bread from the bakery that was sliced about 1/2--inch thick. A basic loaf of country bread or pumpernickel work well, too. For a gluten-free option, Udi's bread holds up quite well.

Paninis always remind me of the short time I spent in Italy. A grilled sandwich in a pan, just somehow doesn’t taste the same. I try to replicate the sandwiches I had in Italy, they come close, but the grooves from the press are missing and that is perfect way to hold the “dip” I have to have with my sandwich. The “dip”is my American nod, they didn’t have “dips” in Italy.

  8. Avocado, bacon and gouda. Yummmmmm!

I haven’t had sandwiches in two years (gluten free), but I have just started learning to bake gluten free bread. So, panini may be on the menu!

  10. I’m thinking a Panini sammich with Jarlsberg and granny smith apples!

I love Panini sandwiches. Just think of a turkey Panini with pepper jack or swiss cheese or a combination of the two — yum, yum. I am entering the contest as I do not have a Panini. I also like veggie paninis. I hope you have a great birthday.

  12. Would love to see some veggy panini recipes!

  13. Happy Birthday! Good sandwich! We make our sandwiches in a skillet, as we don’t have a grill.

I meant to say in previous post that I would “love” to have a panini press, but I guess saying that I would “live” to have one sounds even better. 🙂 And I forgot to mention, that pepper jack cheese is one of my very favorites!

I love panini sandwiches. I make them with an iron skillet, but would live to have a panini press! The first panini I ever tasted included grilled chicken and basil pesto. Yum! I love to try different combos and have friends over.

Imagine the succulent JOY of making this sandwich with this Panini grill!! I’ll find a way to make the delectable sandwich, but know it won’t be the pinnacle experience it could be, w/o this exceptional Grill! 🙂
