Whether you have leftover roasted turkey from the upcoming holiday or purchase your favorite deli variety, this Avocado Turkey Panini makes a satisfying casual dinner.  These wholesome panini are perfect with a cup of soup, a green salad, or a handful of your favorite chips. While a panini press creates a delightful crunch and golden brown exterior, you can certainly use a skillet or grill pan if you don’t have a panini maker.

Avocado Turkey Panini

If you don't have a panini press, simply grill as you would your favorite grilled cheese. To mimic the pressed, crusty panini, weight down the sandwiches with a cast iron or other heavy skillet. For another layer of flavor, you could add a thin spread of Dijon mustard or pesto under the cheese.

Yields 2 sandwiches.

Ingredients

  • 4 slices country style or other hearty bread (ciabatta rolls work well, too; see notes)
  • 1/4 pound leftover shredded turkey or chipped deli turkey
  • 1/2 ripe avocado
  • 1 tablespoon mayonnaise
  • 1/8 teaspoon each kosher salt and pepper
  • 1 tablespoon olive oil
  • 4-6 slices Sargento Ultra Thin or regular Provolone cheese (may substitute variety of choice)
  • 1 cup fresh spinach leaves
  • 1 roasted red pepper, sliced into thin strips (may use freshly roasted or marinated from jar)

Instructions

  1. Preheat a panini press. (You may use a skillet or grill pan if you don't have a panini press.)
  2. In a small bowl, mash the avocado, mayonnaise, salt and pepper together until thoroughly mixed.
  3. Brush one side of each piece of bread with olive oil, and place with the olive oil side down.
  4. Top two of the bread slices with three pieces of the thin sliced cheese or two pieces of the regular, breaking as needed to evenly cover the bread.
  5. Place half of the sliced turkey, half of the spinach leaves, and half of the sliced pepper on top of each piece of cheese covered bread.
  6. Spread half of the avocado mixture on the two remaining slices of bread (on the side without the olive oil), and place on top of the turkey covered pieces.
  7. Carefully, place the sandwiches on the panini press, and cook until the bread is golden brown and crisp and the cheese has melted, about 3 to 5 minutes.
  8. Cut in half and enjoy warm.

Notes

  • The last time I made these, I used a rosemary peasant bread from the bakery that was sliced about 1/2--inch thick. A basic loaf of country bread or pumpernickel work well, too. For a gluten-free option, Udi's bread holds up quite well.

    Looks like I’ll be increasing my recipes, right now I have only one, and it’s fro my salmon salad panini. I don’t have a press either, I use a cast iron grill pan topped with a cast iron skillet. I’ve always wanted a press!

    My husband loves Colby Jack and a good aged swiss, I like Muenster and Swiss, Colby Jack, Salami cheese… My husband is the sandwich maker in our house and would love this Panini maker..My lunches would even be better.

    This makes me hungry,
    so I’m trudging off to the
    kitchen to make a cast-iron
    skillet sandwich since I don’t
    have a panini grill…(happy
    birthday…)…I don’t have this
    recipe of ingredients around,
    so it will probably be a choice
    between: grilled BB white tuna
    with green olives and chopped
    vidalia onions bound with a bit
    of Hellman’s olive oil mayo on
    rye (with seeds, of course)
    OR
    grilled aged cheddar (in the rye)
    with 2 broken-fried eggs and a
    thick slice of vidalia onion (both
    added after grilling)…
    Having a panini grill would
    launch a whole new mental
    mind-set tangent…
