Shredded broccoli stems can be incorporated into any of these recipes:

Cumin Lime Coleslaw
Mayo-Free Cumin Lime Coleslaw
Crunchy Chicken Poppy Seed Slaw
Fall Slaw
Chicken & Broccoli Slaw with Thai-Inspired Peanut Sauce
Southwestern Confetti Slaw (no mayo)
Classic Creamy Coleslaw – with options!
My Favorite Broccoli Salad
Easy Egg Roll Stir Fry
One-Pan Chicken Teriyaki Stir Fry

Of course, you can always dice the broccoli stems and cook them with the florets when roasting broccoli. For some reason though, my family always thinks these pieces aren’t as good.

However, if I coarsely SHRED the stem and roast the shreds along with the florets, everyone is on board: Simply toss them in olive oil, season with salt and pepper (right along with the florets), and then roast in an even layer with the florets. Because they are thin, some of the pieces will crisp and the shreds end up adding a little something special and giving you more bang for your buck!
