Lime Honey Chicken

Easy marinades and a grill make quick work out of summer dinners.  I created this recipe because I adore the combination of lime and honey.  Also, I was looking for a flavor combination which would pair well with–and make a dinner of–a light, summer salad I enjoy. This is one of those meals for which I make certain to have leftovers.  Round two will be just as good!

Lime Honey Chicken
Taking a moment to pound the chicken breasts to an even thickness will ensure faster, more even cooking and a juicier finished product. Many grocery stores and markets will do this if you ask.
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
Optional garnishes
  • lime slices
  • scallions
  • basil
  • cilantro
  • mint
  • chopped macadamia nuts
  • sesame seeds
  1. Mix the honey, soy sauce, lime juice, and olive oil in a large zipper-top bag. Add the chicken and marinate for a few hours, overnight if possible.
  2. Remove the chicken from the marinade, discarding marinade, and grill over medium-high heat for about 4-6 minutes per side or until golden brown and just cooked through.
  3. Allow chicken to rest for five minutes before serving. Sprinkle with any of the above garnishes, if desired.

For a hearty-but-healthy dinner salad, try topping Blackberry, Feta and Mint Salad with Citrus Vinaigrette with sliced Honey Lime Chicken.  Grilling more chicken than you need the first night will make quick work of dinner later in the week!

    Made this tonight along with the blackberry, mint and feta salad and it was a hit! The kids said it was the best chicken they had ever had and wanted more! I didn’t make enough!!! Thank you Ann, looking forward to making your maple glazed salmon tomorrow night!

    Oooohhhh…I made your cherry and feta quinoa salad and your honey lime chicken for dinner tonight! They were both incredible! My daughter (who doesn’t eat chicken…and who doesnt eat chicken?!?!) said it was delicious.

    I think I’m actually going to cut up the chicken and add it to the salad for lunch tomorrow – yum!
