This quick and easy sauce is a versatile summertime staple and a delicious way to use an abundance of cherry or grape tomatoes. It will even make the most of off-season cherry tomatoes. Save

Tomato season is upon us, and whether you’re looking to make salads, soups, sauce, skillet meals, or simply do SOMETHING with an overabundance of the seasonal fruit, I am here to help! 

The following time-tested recipes are some of my family’s favorites and will make delicious use of cherry, grape, Roma, beefsteak, heirloom, and even yellow tomatoes. 

I hope you and your family enjoy them as much as we do!

Shortcut Blender Tomato Sauce

This recipe may be doubled or halved based on the amount of tomatoes you have. Simply blend larger quantities in batches and choose a pot that accommodates.

Yields approximately 2 quarts (8 cups).

Speedy Cherry Tomato Sauce

When cherry tomatoes are plentiful, I adore this quick-cooking chunky sauce on pizza, pasta, roasted eggplant, or by the spoonful! Don't hesitate to get creative and use it over rice, quinoa, and/or sautéed zucchini. The flavors are even better the second day, so feel free to prepare in advance. f making ahead, sprinkle the basil on just before serving to retain its bright green color.
Yield: 4-6 servings; approximately 20 ounces of cooked sauce

As written, this one-pan recipe makes a perfect dinner for two or side dish for four. The recipe can easily be doubled, however. In that case, just be sure to use a skillet with a 12- or 14-inch diameter. Serve with a side of crusty bread to soak up the sauce, or top with grilled chicken or shrimp for added protein.

    Broiled Tomatoes

    Equal parts chopped scallions, shredded Parmesan cheese, and mayonnaise. Mix together and spread on sliced tomatoes. Broil until lightly browned and cheese melts. Makes a delicious side dish. A summer favorite in our family.
